Because the earthy, rich-tasting mushrooms impart a pungent, woodsy
flavor to any number of dishes. Widely distributed in the Northern
Hemisphere across Europe, and North America, it does not occur naturally
in the Southern Hemisphere, although it has been introduced to southern
Africa, Australia and New Zealand. <br />
Porcini are usually sold
fresh in late spring or in the fall. They are rich, heady, meaty and are
amazingly versatile, delicate enough to give grace to an elegant stew
or sauce, and yet vigorous enough to stand up to something as flavorful
as a thick grilled steak. The meat-like texture of Porcini, with its
earthy and somewhat nutty flavor is unequaled among mushrooms.<br />
In Italy, fresh porcini mushrooms are often grilled and served with
fresh olive oil and parsley. They are also excellent fried, stewed with
tomatoes, or used as the base of a decadent pasta sauce or bruschetta
topping. Try pureeing them to make an instant, silky sauce or soup
ingredient.<br />

This post is mainly about decorating macarons and other pastries using edible gold leaf. If you are looking for a macaron recipe, see my French Macarons post for the basic shell recipe. Macarons are already expensive little treats so what can we do to make them even more extravagant? Cover them with shiny gold! Edible gold leaf is difficult to find in stores so I browsed through a few vendors online including Amazon, Sur La Table, and other gourmet grocery stores. Amazon had a great selection but I needed them fairly soon so I ordered these 23-kt edible gold leaf from Alma Gourmet. The estimated shipping time was 3-5 business days but it was delivered in 2 days, probably because New York and Boston are so close. I highly recommend them!<br />

Edible golf leaf is extremely delicate so you will need a few tools to apply them on the macaron shell or any other pastry. You want to avoid touching the gold leaf directly with your fingers because they will stick onto your finger and become unusable. The sheets are super thin and as ridiculous as it sounds, you should look away to breathe to prevent the sheets from wrinkling or blowing away! They aren’t cheap so you want to be very gentle and patient with the gold leaf.<br />

I would recommend a brown or dark brown color as a base for gold leaf macarons. It blends in well in case there are spots that are not completely covered with gold leaf. You will need a small, dry and soft paintbrush, wax paper, and a tweezer. A pairing knife will also help easily cut the gold leaf if you are only using a small piece. You want to work on top of wax paper so that the gold leaf does not get stuck on your counters or other surfaces<br />

Use the pairing knife to cut out a piece of gold leaf that you would
like to apply. Gently pick up the piece of gold leaf with a tweezer and
place it on top of your macaron. Use the brush to gently pat down the
gold leaf then press down lightly on the macaron shell. The gold leaf
should fall into place almost like a sticker. Again, avoid using your
fingers although it’s very tempting! Even a tiny piece of edible gold
leaf can add a beautiful elegant touch to a pastry.<br />

Look at that gold and shiny macaron! Edible gold leaf does not taste like anything by itself. You can make any flavored macaron, pastry, cakes, and cookies with edible gold leaf and it will not alter the flavors. You still want to handle gold leaf decorated desserts carefully as it can be rubbed or scratched off.<br />

To decorate pastries with gold leaf:<br />

1. Cut off a piece of gold leaf with a pairing knife.<br />

2. Pick up the piece of gold leaf with a tweezer and slowly transfer it to the surface to be applied on.<br />

3. Use the paintbrush to gently push the gold leaf down on the surface so it is attached to the pastry.<br />

4. Brush over the gold leaf a few times until has stick to the surface evenly.<br />

food and not just because they taste so good on haute cuisine. The <a href="http://www.almagourmet.com/store/truffles-fresh-white-truffles-c-80_3.html" target="_blank">white truffles</a> sell for about $3,600 a pound while the black variety goes for
over a $1,000 a pound, but whichever variety you choose, they are
expensive because they're both rare and hard to find.</span><br />

specially trained dogs that are used to find them are as prized as the
pricy fungus itself. But there's trouble in truffle land as Lesley Stahl
finds out in Italy and France. Harvests are down and a black market has
emerged that has allowed an influx of inferior and cheap Chinese
truffles that are diluting this lucrative market. Stahl's report will be
broadcast on "60 Minutes" Sunday, Jan. 8 at 8 p.m. ET/PT. </span><br />

including the U.S., have tried to farm truffles to limited success.
European truffles have an edge because the continent's red soil and
rainy summers produce a more pungent variety sought by the best chefs.
But they must be hunted and found when they are ripe, so they are

changes have brought the truffle harvest down to just 30 tons a year

illegal drugs, complete with thefts and murders. As bad as that is,
dealers fear cheap Chinese imports, which look like the more expensive
truffle from France but are a different variety altogether. "The Chinese
truffle is boring...no taste, no smell," says the famous French chef

My wife prefers Lavazza Qualita ORO but I think I like this a little better and the Expiration Date: 03/30/2014 looks pretty good, I wished they would show expiration dates on on the coffee sold by Amazon. Both ORO & Rossa are smoother yet give as much crema as fresh espresso beans from the local roaster. I heard Rossa is the most popular Lavazza in Italy & Canada, but can not confirm it. The difference in taste from Lavazza Qualita ORO is not great, we like both.<br />

We just received several bags of ORO & Rossa that was a little cheaper because we bought in bulk, but shipping was not as fast as getting it through Amazon Prime. I like Rossa & Oro a little better than Filicori Zecchini Gran Crema but that was good too.<br />

I really can't describe the flavor but for dominate chocolate I rank them:<br />

The Lavazza beans gave the best crema, as good as fresh beans from the local roaster. These are the only brand name "espresso" beans we are familiar with. We mostly use a pressurized portafilter & only use the non pressurized occasionally with our little Via Venzia equipped with a Gaggia Latte Art Pannarello Wand but all the beans work well with our Cuisinart grind and brew as well.We use a Breville Smart grinder for the espresso.<br />
<br />
I do know that after finishing the drink there is no bitter after taste, no sour stomach etc.
